- * 正規輸入 LUC 蔵出しドメーヌ・デュジャック:ジャック・セイスさんは2人の息子さんもすでにワイン醸造を手伝うほどのお年にな ったにもかかわらず、ワインに対する情熱はまだまだ尽きません。 1989年には「もっと多くの人に手頃な価格のワインを」という夢を実現するために、ロマネ・コンティのオーナ ー、ヴィレーヌさんと手を組んで南仏に進出。2003年にはぶどう畑こそ所有しないものの、醸造からボトル 詰めにいたるまでドメーヌ・デュジャックと同じ造りを行う「デュジャック・フィス・エ・ペール」を設立しました。 さらにはドメーヌ・デュジャックでも白の1級ワインを造ったり、クロ・ド・ラ・ロッシュの若木で新しく「モレ・サン ・ドニ1級」を造ったりと、飽くなき探究心がドメーヌ・デュジャックを動かし続けています。 長男ジェレミー氏(左)・ジャック セイス氏(右) 名を通常のペール・エ・フィス(父&息子)ではなく、フィス・エ・ペール(息子&父)としたのは、最初の3年間 は父が主体ですが、その後はジェレミーが中心になって運営するようにと言われた為。 デュジャックによって命を吹き込まれたワインは、今までのブルゴーニュワインの概念を大きく覆 すワインでした。この新しいブルゴーニュワインに世界中は虜になりました。 ジャック・セイスさんが取った手法は、より「土地の風味」を引き出すノンフィルター(無ろ過)やノンファイニ ング(無清澄)という方法。それまでは雑味が出やすいと言われていた手法を、ぶどう栽培の段階から醸造 の細部にいたるまで気を配った丁寧なワイン造りで、見事なワインを造っています。 そうして造られたワインは、「色は明るいのに味が濃い」という、デュジャック独特のスタイル。これはデュ ジャックの全てのワインに共通する特徴で、どんな畑のワインであろうとエレガントさと長期熟成する力を 欠かすことなく、さらにそれぞれの畑の個性を活かしたワインを生み続けています。 目が離せないドメーヌ・デュジャック、これを飲まずにブルゴーニュは語れません!
